for the love of peanut butter

My little brother is the best.

I couldn’t love the kid more.

Today he’s off to school to finish his freshman year of college! (I’m so proud 🙂 )

In light of his going away we had a little family dinner last night and because he claims that “his blood runs peanut butter” I had to whip up a little dessert for the boy before he went off to school.

After a Pinterest search, I whipped up my own version of these peanut butter cookies.

For the cookies:

1 1/2 cups quick oats
1/2 cup flour
1/2 cup sugar
1/2 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/2 cup crunchy peanut butter
1/2 cup unsalted butter, softened
1 egg
1 dark chocolate bar
Preheat an oven to 350°F. In a medium bowl, mix the oats, flour, baking powder, baking soda, and salt. Set aside. In a large bowl, mix butter, both sugars, egg, peanut butter, and vanilla. Pour oat mixture into peanut butter mixture, stirring until just mixed. Place rounded teaspoonfuls of batter on an ungreased baking sheet, leaving 2 centimeters between each one. Bake for 8-10  minutes. Let cool completely on cookie sheet, peanut butter cookies tend to brake if taken off too soon.
For an extra touch I shaved some dark chocolate on top 🙂

    Just chatted with that precious boy. You fed him well. WE get him tomorrow night.
