Almond Power Bites [sugar free, gluten free, dairy free]
Last week my doctor recommended that I stick to a strict sugar-less, carb-less diet. (Yes, it’s pretty difficult with my birthday coming up this week.) But we’re giving it a concerted effort and cooking sugar-free, gluten-free, and trying dairy-free too. I’m particularly obsessed with making and eating these no-bake bites.
Almond Power Bites
(adapted from Maximized Living Nutrition Guide)
2 cups raw almonds
1/2 cup flaxseed meal
1/2 cup unsweetened coconut
1/2 cup raw almond butter
1/2 tsp salt
1/2 cup coconut oil
3/4 tsp stevia or truvia
1 tbsp vanilla
30z (squares) unsweetened chocolate, (sweetened with truvia to taste)
Place almonds, flaxseed meal, coconut, almond butter and salt in a food processor. Pulse briefly, about 10 seconds.
In a sauce pan, melt coconut oil over very low heat.
Remove coconut oil from stove; stir stevia and vanilla into oil. Add coconut oil mixture to food processor and pulse until ingredients form a course paste.
Scoop the almond bites onto a lined baking sheet with a mellon baller and place in the refrigerator to firm.
Melt the unsweetened chocolate in a double broiler or microwave. When the chocolate has melted, mix in two packets of truvia.
Drizzle the chocolate over the bites and let them firm up in the refrigerator for 10 minutes or so, then enjoy!
*NOTE: these tend to melt from the almond butter and coconut oil so when you’re not eating them, keep them in the refrigerator.*
