late-night olympic snack: eton mess

I’ll jump on the bandwagon and say I’m slightly obsessed with the Olympic games.

It’s nothing new though, my obsession began with women’s swimming at the Sydney games in 2000. My friend Veronica were convinced we would be the next “big thing” to hit the pool at the next Olympics. True story.

More recently, I’m blessed to have a close friend from England who shared this decedent dessert with me a couple of months ago. When the Olympics opened last month we had our own little party with more Eton Mess than you can imagine ๐Ÿ™‚

 

Eton Messย 

Eton Mess is a traditional English dessert named after the University of Eton (where the princes’ William and Harry studied.)

(recipe for a single serving)

2 scoops of vanilla ice-cream

1/4 cup chopped strawberries

one big dollop of whipped cream (no, the can will not work, neither will “Cool-Whip”, )

A generous handful of crushed vanilla meringues

 

Combine the ingredients into a ice-cream bowl or parfait glass and serve!

    Wouldn’t you love to be in the UK to try the dessert while watching the games?!?!?
    I’d love to be with you anywhere trying any dessert. Miss you but LOVE you more!!!!

    ๐Ÿ˜€ – This is what I looked like while reading your post today (grinning ear-to-ear)! Olympics, a dear friend, and dessert all rolled into one? Yep, day is made!!! Now I just need to pick up some strawberries and cream and find some vanilla meringues . . . preferably in time for the closing ceremonies. ๐Ÿ˜‰
