late-night olympic snack: eton mess
It’s nothing new though, my obsession began with women’s swimming at the Sydney games in 2000. My friend Veronica were convinced we would be the next “big thing” to hit the pool at the next Olympics. True story.
More recently, I’m blessed to have a close friend from England who shared this decedent dessert with me a couple of months ago. When the Olympics opened last month we had our own little party with more Eton Mess than you can imagine 🙂
Eton Mess is a traditional English dessert named after the University of Eton (where the princes’ William and Harry studied.)
(recipe for a single serving)
2 scoops of vanilla ice-cream
1/4 cup chopped strawberries
one big dollop of whipped cream (no, the can will not work, neither will “Cool-Whip”, )
A generous handful of crushed vanilla meringues
Combine the ingredients into a ice-cream bowl or parfait glass and serve!
